Hands down, the best part about being a cheese man, besides the babes, is handing over some cheese joy to a new customer and watching them have their "this is it" moment. I love starting them on that journey.

Cheese is really the only food I can think of that illicits such a powerful associative memory response. Part of it is that cheese is a culturally loaded icon, from the highest of culture to the lowest.

The other part is that cheese is a physical food. What I mean by that is that it doesn't merely engage but requires the attention of all the senses.

My friend Emiliano puts it this way:

"Taste is a very personal and intimate experience that can be extrasensory; evoking feeling, emotion, and memory. [...] One of my friends described the taste of Jasper Hill’s Winnimere as 'taking a walk through the bacon forest,' and while abstract, those words accurately describe the experience. The first time I ever tasted Constant Bliss, I was reminded of the way the redwoods smell in Northern California after those first drops of an autumn rain." .

I hope that the cheese you buy from me will be a reason for friends to get together and make new memories.
